In the 17th century, early pasta machines were found in Naples, and one pasta legend tells us that the first pasta machine was made by Spadaccinni in 1833, commissioned by King Ferdinand, who reportedly asked Spadaccinni to invent a pasta machine after witnessing peasants kneading pasta with their feet.

Today, pasta can be found in dried (pasta secca) and fresh (pasta fresca) varieties, and being served fresh homemade pasta by yourself is a real treat, as you can be assured that the pasta was made that day and will have a taste that will make you rethink notions of what good pasta is.

Choosing your new pasta machine is a special moment, and the smallest details of each part are designed to enhance its elegance, ensure product durability, and simplify the process. The machine comes with a set of tips, including not using cold eggs straight out of the refrigerator, not adding salt to the dough, cleaning the rollers by feeding a little dough between them, preserving home-made dried pasta for no more than 1 month, and freezing freshly cut pasta, but always consuming it within 1 month.

The method for using the machine involves placing the flour and salt in the Kenwood Bowl, adding the eggs, and using the Dough Hook to mix on speed 3-4 for 3 minutes. The mixture should look crumbly but moist, and if necessary, a teaspoon of water can be added if the mix is too dry. The crumbly mixture is then kneaded by hand to form a dough, which is divided into two or three pieces and wrapped in clear film, left to rest for 15 minutes or up to 2 hours.

The Italian Pasta Maker is then fitted, and one piece of dough is shaped into a long flat disc and fed through the rollers set on number 1, with flour sprinkled over the rollers as necessary. The dough is then folded in three, rotated, and repeated several times, passing through the rollers and gradually increasing the setting from 1 to 6 or 7, or the desired thickness. The flat pasta sheets can then be used as is or cut using one of the Cutting Attachments, allowed to dry for 30 minutes, and then cooked or covered and refrigerated for up to 24 hours.

The ingredients required for this process are 350g (13oz) fine white flour, type 00, 150g (5oz) strong plain white flour, 2.5ml (½ tsp) salt, and 4 eggs, lightly beaten.

The pasta maker machine is made of food-grade chrome-plated steel, which is more durable and ensures the production of healthy, fresh homemade pasta. The rollers are made of food-grade nickel-plated steel, which can avoid releasing harmful health dust during friction between metals.
